Easy One Pan Dinner: Chicken on Lemony Green Beans w/ Potatoes & Giveaway Winner!


Don't you love one pan dishes?

No pots to clean, little prep, and voila, dinner is served right from the pan!

This is a basic roast chicken w/ green beans and potatoes, but it is jazzed up by lemons, garlic and my addition of herbs.

I found this recipe on Real Simple, however, after reading the user reviews, I almost decided to ditch it.

What a bunch of complainers.

"This dish was bland", "Too Lemony", "I don't like chicken, so used fish instead", "I don't like lemons, only limes", "I used boneless breasts and it was dry" (you think?)........geez Louise, who are these people?
How can chicken w/ roasted potatoes be bad?

Make sure you use chicken WITH skin, either thighs or breasts, it keeps the meat moist and if you are against skin, just take it off later.

This dish was moist and delicious, and "real simple", so not sure what their problem was.
Everyone's a critic.

It's easy to prepare ahead and you can double it for a crowd.

One Pan Dish: Roast Chicken Breasts w/ Lemony Green Beans & Potatoes: (adapted from Real Simple).

4 chicken breast halves, on the bone, with skin (don't use boneless breasts: will be dry!)
2 lemons (one sliced, and one for the juice)
big handful of fresh or dried herbs of your choice (I used basil, parsley & rosemary)
kosher salt
4 big cloves garlic, minced
6 tbsp olive oil
1 lb. of little red new potatoes, quartered
1 lb. of green beans, trimmed

In a 9 x 13 pan (NOT GLASS), lay the slices from one lemon on the bottom of the pan.

In a big bowl, add the 6 tbsp of olive oil, the garlic, and the juice of one lemon.
I added fresh herbs for color and flavor.

Add the green beans to the lemon oil mixture and toss them to coat. With tongs, remove the beans and lay them on top of the lemon slices.

Next, add the quartered potatoes to the olive oil marinade and toss them to coat.
Add the potatoes to the edges of the pan and sprinkle the whole dish with kosher salt & pepper.

Now add the 4 chicken breast halves to the remaining oil to coat (there will be enough oil, I promise). Lay the chicken on top of the green beans. Sprinkle kosher salt & pepper on top of the chicken.

Try and get the potatoes around the chicken, and not underneath w/ the beans, so they get nice and browned.

Roast the pan in a 425F oven for 50 minutes. Let rest 10 minutes before serving.

Delicious and EASY!

Why not glass? The pyrex can take 425 but not the broiler.

Anything with fresh rosemary is tops with me!

BTW: people that want to use boneless chicken...brine your chicken first and don't cook it as long but really, the way that Stacey did it is the best. The bones and skin add a lot of flavor and they can be removed later if necessary.

I have had bad luck with Pyrex at over 400F....the chicken cooks too fast and gets dry.

I'm with you Stacey, I read 44 reviews of a recipe and the 41st finally had the guts to write that she finally found "1" review of the dish as written. How can you review a recipe when you have changed it? I could eat just a simply salted & peppered roast chicken and be happy, but with potatoes....

I used to make something similar years ago with chicken breasts that had the bone in, but it fell off my radar as I moved to whole roast chickens. But now, you are reviving my interest in this simple but delicious dinner.

I made this last night ,sans the potatoes. I have never tastes something so good! The green beans were incredible!
I wanted just a big bowl of those,forget the chicken,which was also good.Next time I want to try thighs. Whats' next?
I love Rosemary and garlic together. And to make this in one pan! Can almost smell it now. ( I'm roasting garlic and going to can, so the garlic odor is pretty strong! )

That looks like a yummy one dish dinner. There are times when one pot is just great. I am going to try your fig galette tonight. It looked so lovely when you posted it .
I adore 1 pan meals, throw everything in, put it in the oven, the house smells good and and dinner is served. Whats not to like about this? People crack me up!
Just made for lunch today and it was heavenly. I loved the lemon that showed up here and there. Planned to have it again for dinner, but....the spotted great dane stole the rest. TGod the bones were out.

I'll make this again and again. have a great weekend!

I made this yesterday and discovered to my surprise that I'd forgotten to get potatoes. However, my heart was set on this dish, so I substituted parsnips. I used fresh thyme and marjoram from the garden and everything was delicious. I know I would enjoy it more with potatoes, but the parsnips were pretty good, too. The kitchen smelled wonderful
