Apple Crisp w/ Greek Yogurt



There is nothing easier and nicer when the weather gets chilly, than an apple crisp.

It's so easy, and actually not that bad for you.

You can use any variety of apple, and I used a nice granola on top, instead of the usual oats. Serve with a nonfat Greek yogurt for a delicious healthy (sort of) breakfast.

For a 9" round pie dish:


Apple Crisp with Granola:

6 apples, peeled, cored and sliced
1 stick of butter (1/2 cup)
zest and juice of 1 lemon
cinnamon for the top
1 cup of ready made granola (*or 1 cup of rolled oats w/ 1 cup of brown sugar)

Use some of the butter to grease the pie dish.

Mix the sliced apples in a bowl with the lemon zest and juice and set aside.


In a separate bowl, cut 3/4 of the butter into little pieces and mix w/ the granola (if you are using oats instead, don't forget to add sugar). Using your fingers, incorporate the butter pieces, pinching in between your fingers, until you have a big lumpy mess.

Spread the apples out in the greased pie dish and add the granola topping. Sprinkle w/ cinnamon and cut the remaining 1/4 stick of butter into pieces and dot the top of the dish.

Bake in a preheated 375F oven for 45 minutes or so, until bubbly and top is brown.

I served this in the a.m. with a spoonful of nonfat Greek yogurt, but vanilla ice cream is probably better!

Where was this recipe three days ago when I needed to make an apple pie for my son? This is WAAAAY more simple than the one I tackled. I will be putting this in the recipe box for Thanksgiving. Perfect!

This was one of Rich's favorite desserts - if not his very favorite - and I love it too. I noticed you don't use any sugar mixed in with the apples. Was that intentional? And I'll opt for the vanilla ice cream rather than the yogurt, 'cause I'm a bad girl.

I didn't use sugar, because I used ready made granola that was already mixed with sugar and other good stuff.
If using just oats, then I wrote use a cup of brown sugar.

I teach a dish almost identical to this one to my Cooking Matters students. Love the idea of the dollop of yogurt, will add that next time.
