Great Grilled Green Beans


I think by now we have grilled every vegetable, right? Except for green beans.

What are you waiting for?

This was our last harvest of green beans for the summer at our militant community garden, so what better way than to grill them up.

This is Michael Ruhlman's recipe and I think it's the best.

Make sure you eat them with your fingers, not a fork.


Great Grilled Green Beans (adapted from Michael Ruhlman):

1/4 cup olive oil
2 to 3 cloves of garlic, minced
1 to 2 teaspoons red pepper flakes
1 teaspoon ground cumin
1 pound green beans, stems trimmed
1 lemon for zesting
kosher salt to taste

Combine olive oil and garlic in a bowl (as well as the red pepper flakes and cumin if using). Add the green beans and toss by hand till they’re uniformly coated.


Put the beans in a hot grill basket or on the hot grate of the preheated grill and cook till they’re brown and tender, about 7 minutes total.

Remove to a serving dish, season with kosher salt and finish with freshly grated lemon zest.


So good!

Thanks for the recipe! We have had so many green beans and how many ways can you fix them. This sounds delicious and different.

Here's another way to get that delectable 'char' on your green beans, via James Peterson's wonderful book VEGETABLES: parboil your beans however long you think they need, I usually do 7 minutes. Drain. Return beans to the same pan and put over high heat. Toss frequently. You'll see the 'char' happen right before your eyes. Basically, you are dehydrating the beans, getting out all the H2O. When they're done (probably 2 or so minutes), take off burner, add your fat and seasonings right into the pan. My usual is evo with slivered & smashed garlic, then a sprinkle of salt and freshly cracked black peppper. Again, toss like mad, you'll get a lot of sizzle and smoke - exciting! Play with your additions, butter can be used for a french preparation, along with any herbs, spices, or aromatics you prefer. Enjoy!

So.. I have actually been doing something BEFORE you did it?? We have been grilling/roasting green beens for a couple of years now.. Love to over-do them a little..they remind me of soft shell crabs, however strange that may sound. But it is the BEST way to cook them. Only problem is that a family of 4 can eat several pounds of grilled beans at one meal. I have not yet been able to cook enough to satisfy my bunch!!!
Never did that but now I will!
Have to find some more good beans because these look amazing... Still munching on your last post of the grilled vegetables in a tart.
