Garlic Scape Pesto


and here are those weird scapes again.......those freakish curly things that I had never seen until I went to my first farmer's market 4 years ago.

Well now we have them in our own garden.

Here is a list of good things to make with scapes, which are just the shoots of hard neck garlic.


I like to use them as garnish, because they are a conversation piece, and people always ask what they are.

They are pretty strong in flavor and have a nice bite, like a good piece of raw garlic, so beware.

I swiped this lovely pesto on my homemade olive bread toasts and served with some fresh local made mozzarella and roasted beets picked yesterday from my garden for a nice lunch.

Yummy stuff.


Garlic Scape Pesto:

big handful of scapes (garlic shoots), about 7
handful of almonds
1/4 cup of Pecorino Romano cheese
pinch of sea salt
zest of a lemon
1/4 cup of olive oil

Slice the garlic scapes into pieces and throw into a food processor or chopper w/ the rest of the ingredients. Pulse until it becomes a nice paste (pesto).


Spread on toasts or throw in a little more olive oil and serve with pasta.

Garlic scape pesto is one of my favorites! I always try to freeze some before they disappear!

Alas, I have no garlic scapes. Next year will have to plant some.The pesto is a great way to use these.
