What's for Lunch? Smoked Trout w/ Beets & Potato Salad



This was a quickie, all assembled from what was in the cupboard & some leftovers.

I always keep a can of smoked trout lying around (Trader Joe's sells a decent one) and a jar of pickled beets is key when you don't have an hour plus to roast your own.

Leftover roasted potatoes from last night's mustard roasted potatoes and a lovely bag of arugula, tossed with some of that yummy dressing from yesterday.

Lunch is served.
