Peach Crisp



Another lovely late summer dessert. Who doesn't love a crisp?
You can also call it a crumble, I guess, but the topping got nice and crispy, so I am calling it a crisp.

I used the last of my summer peaches and got one more summer dessert in under the bell (fall will be ringing in soon).

The nights are shorter, the crickets are not as noisy, and it just feels like summer is over. Plus, all this miserable rain we have been having in the Northeast is so depressing and causing so much damage. Can't we send some rain to Texas, who really needs it?
I guess it doesn't work that way.

This recipe is from chef Anne Burrell. I like her sassy way of cooking and her fresh mouth, I also don't mind her heavy hand when it comes to fat and salt, however, this time I cut out a lot of the unnecessary bad stuff.

I used less than half the butter she calls for in the topping, and much less sugar (almost half the amount) and the results were great.

Don't skip the lemon zest and juice in this one, it really works well with the peaches.

Peach Crisp: (loosely adapted from Anne Burrell)

4 peaches, pit removed and cut into chunks
zest and juice of 1 lemon
3 tbsp flour
1/4 cup brown sugar
2 tbsp white granulated sugar
1 tsp vanilla
1/2 cup golden raisins

Topping:

3/4 cup flour
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup oats
1 tsp cinnamon
1/2 stick of cold butter, cut into pea size pieces
1/2 cup of sliced almonds (walnuts or pecans)
2 tbsp cold water

You can use a buttered baking dish, or individual buttered ramekins.

In a bowl, mix the peaches with the rest of the ingredients to coat and spoon fruit mixture into prepared baking dish.



In a food processor or using your hands, combine the topping ingredients until it resembles coarse meal. Add a tbsp of water and moisten, (you may need to use another tbsp of the cold water).

Loosely spoon the topping mixture over the fruit, not packing it down too tightly.

Place on a baking sheet and bake in a 350F oven for 30-35 minutes until the top is crisp and the fruit is bubbly.



Enjoy with some vanilla ice cream and hope the sun comes out for one last hoorah!

Anne Burrell is a sassy one isn't she? I have always loved fruit crisps - my mom always made apple crisp in the fall and I've made peach crisps but not lately. Thanks for the delicious reminder.
