More Fun with Eggplant



Did you know that lunch is my favorite meal of the day? It is.

So many choices for lunch with minimal effort. Sandwiches and salads made with leftovers, being my favorite.

Today's lunch consists of some leftover grilled eggplant slices on pizza bread with some tomato sauce, basil leaves from the garden sprinkled with Pecorino Romano.

Here is more summer fun with eggplant. I can't get enough of it.

In Southern Italy they call eggplant the "poor man's meat".



Eggplant Pizzas:

Spoon some tomato sauce on top of the pizza bread and layer some grilled eggplant slices.
Sprinkle a tablespoon of Pecorino Romano on top of each slice and fresh basil leaves.

Grill the flat breads (or whatever bread you are using) for about 5 minutes, watching that they don't burn.

I am very very bad about making lunch for myself. I either eat out or eat something really embarrassing. I'm not sure why I waste a meal but that is the pattern I am in. Time to break free!

I just ate pizza with eggplant on it for dinner! Love that stuff. And i love these sandwiches! Leftovers are my favorite lunch as well.
