What's for Lunch? Grilled Cheddar & Fig
Here's a new twist on an old classic.
Take some good quality cheddar (not the orange wax stuff in the shrink-wrapped package please) and lay it on some buttered whole wheat bread.
Cut 3 dried figs into slices and lay on top.
Fry in your skillet, like you would any grilled cheese sandwich.
Once the cheese is melted and the bread is nice and crispy, open the sandwich up and place some fresh baby arugula leaves. Close the sandwich and press down.
Voila! Lunch is served.
