What's for Lunch? Grilled Cheddar & Fig



Here's a new twist on an old classic.

Take some good quality cheddar (not the orange wax stuff in the shrink-wrapped package please) and lay it on some buttered whole wheat bread.

Cut 3 dried figs into slices and lay on top.



Fry in your skillet, like you would any grilled cheese sandwich.

Once the cheese is melted and the bread is nice and crispy, open the sandwich up and place some fresh baby arugula leaves. Close the sandwich and press down.

Voila! Lunch is served.



Yum.

The Queen of Tarts is also the Queen of Figs! Nice! Melted cheese and figs is one of my fave combos.

This sandwich looks amazing. I love the taste of figs and cheese! If anyone is trying to do a low-carb version, I think the ingredients would taste great on Wasa Whole Grain crispbread. I bought a carton of fresh figs recently, imported from California; what a disappointment! They were nearly inedible! I guess I have been spoiled with juicy, to-die-for sweet figs from our garden in the lebanese mountains! I think it was wise to use dried figs in this sandwich, and i will try it too. At least the dried figs do not fail you.

I was going to be making grilled spiced apple and cheddar cheese sandwiches next week.....but I think I am going to change it to these instead. Yum is right!!
