What's for Lunch? Grilled Chicken Club w/ Avocado



What's in Henry's lunchbox today?

I always make extra grilled chicken breasts the night before, so I can have yummy salads or sandwiches for the next day.

Instead of using mayo, I used a healthy avocado for the spread.

You can omit the pancetta if you like, but what would a club sandwich be without bacon?

Here are the components you will need to make the most delicious sandwich. (Why buy lunch, when you have everything right there in the fridge, and it tastes so much better).

Grilled Chicken Clubs w/ Avocado: makes 2 sammies

4 slices whole grain bread
1 grilled boneless chicken breast, sliced thin (1 will be enough for 2 sandwiches)
2 slices of cooked bacon or pancetta
1 whole avocado, cut in half
2 plum tomatoes, sliced
kosher salt
cilantro leaves

I like to toast my bread, but you don't have to.

Remove the pit from the avocado and scoop out the halves. Make nice slices with a pairing knife and lay on top of 2 slices of bread. Sprinkle with kosher salt and cilantro leaves.

Lay your tomato slices on top of the sliced avocado and then a slice of bacon.
Top with grilled chicken slices and close up the sammie!



Take and bite and smile. Yummy.

PS This was yesterday's lunch, today he has cold turkey meatloaf of course!

Yummy... I know very well that Henry is a BIG guy... but is his mouth big enough to get around that delicious sandwich.?

No way am I showing this to my husband. He'll have me slicing avocados and grilling chicken every night.
