What's for Lunch? Veggie Sandwiches



What's in Henry's lunchbox today?

Not the usual leftover turkey sandwich, tuna or PBJ, but a vegetable sandwich!
My meat eating husband is loving vegetables these days. Go figure.

My girlfriends and I used to eat this sandwich at a place called C'est Cheese back in the 80's.
It was so yummy, served on marble rye with sprouts and herb mayo.

C'est Cheese Veggie Sandwich: makes 4 sandwiches

marble rye or whole grain bread slices
Hellman's real mayonnaise
1 cucumber, sliced paper thin
1 red bell pepper, cut into thin strips
1/4 red onion, shaved paper thin
bean sprouts (optional, but makes the sandwiches yummy)
Danish Havarti cheese w/ dill, sliced thin with a cheese slicer

Use about 2 slices of cheese per sandwich.

Start by swiping each slice of bread with mayo.
Layer one side w/ the sliced cucumber, then red pepper, onion, 2 slices of cheese, ending w/ the sprouts and topping with a second slice of bread.

The cukes and the red pepper are nice and crunchy and the dill in the Danish Havarti cheese pairs so nicely with the crisp vegetables.

P.S. don't forget the sliced pickle on the side!

...and I ate something very similiar w/MY gal pals way back when designing in the garment district. Our creamy dreamy veggie sandwich was on a super skinny baguette, and included a layer of sliced avocado. What was playing on the radio, what were we wearing? And what's with the steel rod puncturing Henry's sandwich!?!

The steel rods are fancy corn on the cob holders......I usually hold the sandwich in my hands and feed to him so he doesn't have to get his hands dirty. ha!

That looks like one delicious sandwich. Has Henry's mother been sick? Wish her a happy Mother's Day for me.
I love meat, but to me, there's nothing better than a mean vegetable sandwich! Especially if cheese is involved :)

That sounds so good...I have to try that next week for sure. I love sprouts on sandwiches and the thin slices of cukes and onions are sheer heaven. Yummo!!

Yummmy - West Seattle has a french bakery which serves a veggie on french bread. It appears to have a layer of cream cheese (???) and shredded carrots that appear to have been marinated in either vinegar or anise. Wondering if you have any idea about the marinated carrots? Delicious

OMG, we had a place in our little suburb growing up called C'est Cheese and it had a great veggie sandwich! It wasn't like this one, but I got it once a week at least. Hadn't thought about it in 20 years. Thanks for the reminder. That man may just try tofu yet.

I made this sandwich for lunch yesterday and now I am addicted! It was so good. I have no idea why this combination worked so well, but this is my new go to sandwich! I am having another one at work today! Thanks for the idea!

omg, the moment this post came out I was not able to stop thinking about it, dreaming about it, I had to have it. I had to omit the onion, mine had grown soft, very sad. All I could find were canned bean sprouts and although I've found some good uses for them I could not add them to such a perfectly delicious fresh sandwich so I substituted alfalfa sprouts & added arugula - cause I had it & I love it and can't get enough of it lately!! I ate this sandwich 3x last week, it so delicious and sastifying. The 3rd time I added a bit of Gourmet Garden Fresh Blends Mediterranean to the mayo and it gave it nice flavor along with some chopped capers! Love me some capers too! This sandwich is delish!! Thanks for bringing us back to the basics!!
