Steak Bites w/ Chimichurri Sauce & a Grill Pan



Steaks with chimichurri sauce are a summer staple in my backyard.

I usually serve this Argentinian sauce with hanger steaks (diaphragm cut), which are inexpensive and delicious, but since I was serving them at room temperature, I felt filet mignon would be a better choice.



I thought why not serve the filet bites as part of an appetizer buffet?
This way people could grab a piece of meat, give it a dip and move on to the next bite.
No knife or fork needed.

I grilled my steaks in my favorite grill pan, and made these one hour before serving.



Steak Bites w/ Chimichurri Sauce: serves 8 as an appetizer

3 filet mignon steaks, 1 1/2" thickness
kosher salt & pepper
2 roasted red peppers, cut into squares the size of the steak bites
6" wooden skewers

Chimichurri Sauce:

a large handful of fresh cilantro, chopped fine
a large handful of fresh parsley, chopped fine
2 garlic cloves, minced thru a garlic press
3 tbsp red wine vinegar
4 tbsp olive oil
kosher salt & black pepper

Make the chimichurri sauce. Mix all ingredients in a bowl and season with salt & pepper to taste. Set aside (the sauce can be made a few hours ahead).



Season the steaks w/ kosher salt & pepper. Let sit on the counter and bring to room temperature before grilling.

Heat a grill or grill pan and grill the steaks about 4 minutes per side for rare.
Let the steaks rest a few minutes and cut into bite size cubes.

Thread each skewer with a roasted red pepper piece and piece of meat.
Arrange them on a platter and drizzle some chimichurri over the skewers.



Can be made 1-2 hours before serving.

On another note:

Many of you have written to me over the years asking what kind of commercial non stick grill pan I use, since it's so nice. For ages, I couldn't find it anywhere.



Well, I found a few left on amazon. It is an Anolon Advanced pan and is discontinued and reduced to a very good price, so get it while it's still available (it comes with a glass lid and is commercial grade).
I really love it. It makes nice grill marks on everything, and it cleans up beautifully.
It is the perfect indoor grill before outdoor grilling season begins! (and I am not getting paid to endorse the pan!).

Just ordered this grill pan! I have been coveting it for a while and it was a good price, though I think it is discontinued on the Anolon site. It is fantastic! I love it. Perfect grill marks everytime. Great minds think alike.

Just had to let you know I made this for dinner the other night and it was so delicious!
My younger son, Kris, absolutely loved the sauce and he devoured almost every last bite ( he let Mom have some:) That chimichurri is the best.
