The Tuesday Tart & A Giveaway!



I like the sound of that: "The Tuesday Tart".

From now on, I will only post tarts and quiches on a Tuesday, I like to have a theme going on.

I made this years ago for a bridal luncheon and forgot all about it.
It is so easy and so delicious.
And now that those beautiful big fat spring leeks are in the markets, pick some up and make this wonderful quiche.

The recipe is from the new Martha Stewart book Pies & Tarts. This book has been revamped for 2011 with 150 pie and tart recipes, sweet & savory.

Leek & Corn Quiche:

1 recipe pate brisee (from Martha's book) (or a pre-made pie crust)

3 leeks, trimmed & sliced thin
1 1/2 cups corn kernels (frozen is fine)
1 tbsp fresh thyme leaves
1 tbsp butter plus 2 tbsp olive oil
1 cup grated Gruyere cheese
2 eggs plus 1 egg yolk
1/2 cup heavy cream
1/2 cup whole milk
salt & pepper
pinch of nutmeg

Get your pie crust ready by rolling it out and fitting it into a 9" tart pan (I like the ones with the removable bottoms). Put the prepared pan in the freezer for a few minutes to firm up and chill the dough again.

In a large heavy skillet, heat the butter and olive oil and saute your leeks a few minutes until they are softening. Add the corn and thyme and saute another few minutes. Season with salt & pepper. Set this mixture aside.



Make your custard by whisking the milk, cream and eggs together in a big measuring cup so it's easy to pour.

Remove the pie crust from the freezer and prick it all over with a fork. I pre-bake my crust at 375F for 9 minutes, I would suggest using pie weights if you have them.

Spread half the grated cheese (1/2 cup) on the bottom of the pastry and add the corn and leek mixture.

Carefully pour the custard over the contents in the pie pan and finish with the rest of the grated Gruyere on top.

Bake 35-40 minutes in a 375F oven. Let rest a few minutes before serving.

I like the sound of "The Tuesday Tart." Makes me want to re-invent myself and start a new blog. The leeks really work against the creaminess of the tart/quiche. My favorite is definnitely the tomato tart - when the tomatoes come in. The deep red satisfies before I take a forkful. But of course there's the berry tart... and the zucchini one... did I ever mention I'm not good at favorites?

My favorite pie to make is the old fashion apple pie! In the fall I collect apples with my kids from a friend's tree then we turn them into wonderful pies in which we freeze a few so we can enjoy them until next year's crop of apples are ready!

I love the vegetable and meat pies that are the rage in England. Every pub has their own version of Pie and Mash; a delicious, flaky pastry with a variety of meat and/or vegetable fillings, always accompanied by yummy mashed potatoes, tender green peas (they actually go quite well with this combination!) and a dark, rich sauce served in a tiny little pitcher. Hearty and fabulous!

Yummy! Can't wait to make this. I like the combo of corn and leek. Sounds corny,(no pun) but my favorite pie is my Mom's apple pie! Her lard crust is so tender, flavorful and flaky. The apples are a perfect combo of tart, sweet firm and soft. I can't duplicate it.

Dear Queen of Tarts,

My all time favorite tart is a roasted pepper and olive mozzarella tart. I found the recipe in a magazine over 25 yrs ago and it had black olives and guyere, but I changed it to mozzarella and kalamata olives.
It also has red onions, eggs and heavy cream and chopped herbs. Its my go-to receipe for a first course at a summer cookout. I partially pre-bake my crust, add the beaten eggs, heavy cream, dices buffala mozz. 1/2 cup olives, salt, pepper, herbs (usually chopped basil). I then top the filling with roasted peeled multi colored peppers in like wheel spokes. Bake at 375 for 40 minutes. Tastes great cold leftovers for the next day lunch.

For me tarts and pies are all about the crust, and great crusts usually result from the use of lard, it makes such a difference. Right now a french coconut pie in my
homemeade crust sounds perfect. Yum!
I've got lots of favorites...asparagus and goat cheese is definitely one of them!

Ooh, where do I start?
While I love fruit pies and tarts I have to admit my fav are the savoury ones. I love an egg and bacon pie, as well as a zucchini tart that I also put mushrooms in.
Pretty boring I guess but they are so easy to make and eat. I will definitely be making this one.

My favorite tart...is one of yours - Tourte aux Blettes. I came across this on your site a while back and it has become a staple for us...especially when the Swiss chard starts flowing in from our CSA. It is a delicious recipe and SO easy to make.

I have had my eye on this book! I LOVE frozen chocolate pie with a thick layer of whipped cream. This pie is a tradition at all of our family holidays. One year there was no chocolate pie and there were a lot of unhappy campers (including me!). That mistake was never made again.
love the corn and leek combo, inspired! Savory tarts it has to be caramelized onion and mushrooms with thyme (wow, gotta have one of those again soon!) Sweet pie it has to be pear, blue cheese and walnuts (Which is kind of savory too, ah well!)

I just made quiche for Easter-fav is carmelized onion, bacon and swiss.
Probably no surprise here -- favorite tart is rhubarb strawberry custard. And my rhubarb is almost ready!!
Oh wait! The rhubarb-strawberry is my favorite sweet tart; my favorite savory tart is the French tomato tart with gruyére, mustard and Nicoise olives. And of course... only fresh, summer, heirloom tomatoes!

My favorite tart is a Bavarian Peach Tart that Jenny has made a few times. It is absolutely Delicious. She made it for her grandmothers 80th birthday 2 years ago too. It is from the pastry chef of the Clinton House, Its awesome!!

I haven't had much experience with savory pies, other than quiche or shepherds pie... as for sweet pies - VERY difficult for me to choose a favorite, but if you really pushed me, I'd have to choose classic apple with vanilla ice cream or pumpkin warm from the oven with fresh whipped cream!

The best quiche I ever made was from a quiche cookbook that I could never find again after using it. The recipe was for crab and avocado quiche and I made it for a Christmas Eve dinner. My favorite fruit pie is French Strawberry Pie. I got it out of a 1978 Redbook magazine that is now about to fall apart. It is simply a baked pie shell w/ softened cream cheese spread in the bottom; then place large strawberries pointed side up in the creamcheese til the bottom is covered. Puree the rest of the strawberries in the blender, then boil w/ cornstarch and sugar til thickened (so that you have 2 cups) and pour it over the pie. After the pie cools, whip some heavy cream w/ sugar and dollop on top. Yum. Easy. Pretty. Elegant.

I had no idea that one of my favorite cookbooks was being revamped! I have made many, many pies from that book, but one of my favorites is the peach pie. When I bought my little cottage 15 years ago, low and behold there was a peach tree on the property. So, I went right to the guru and found a simple but delicious peach pie recipe. The tree is now gone (they are short lived in this region) but I still try to make one now and then.

One of our favorites is an old Kraft recipe for pumpkin cheese pie. It's a layer of pumpkin on the bottom with a cream cheese layer on top and is a Thanksgiving staple for our family. It's especially good with a big dollop of whipped cream.

Hmmm.... Really any that's warm from the oven! Right now I'd probably say my favorite pie is German crumb. A breakfast pie with a molasses taste. Deee-licious with coffee! I would like to experiment more with savory tarts

HUCKLEBERRY PIE:

We would go to "huckleberry hill" as kids and pick huckleberries in California (1 in mouth, 1 in bucket and so on) for what seemed like hours as a family. Then we would get home and mom would wash them and put them into a pie. We couldn't believe how so much work would go into just ONE PIE, but they are little berries! A slice a la mode was ALWAYS worth it. I can still taste them. Yum.

Stacy, i'm probably too late but i'll post anyway. First let me say I LOVE making pie and cookies. Both are my ultimate form of therapy and pie takes the lead. It must be something in rolling out the crust that has this calming affect...
A favorite pie to make is what...someone? coined as a marriage pie. It's any pie made with two kinds of fruit. My favorite combination to make and give is pear and raspberry. I have been known on my street to deliver a fair amount of these to newlyweds and they are always well received!
