Peanut Butter Chicken Wraps



Strange title to this post.

Peanut butter and chicken?
Why not? If you can use peanut butter in sesame noodles, then why not with chicken?

I made a delicious peanut butter dipping sauce for chicken satay last night and had some leftover. Why throw it away, when a sandwich was waiting to be slathered with it the next day.

I also tried flax roll ups for the first time, and they were pretty good. Not a tortilla wrap filled with fat, but a low-fat, high fiber lavash type of bread made with flax seed meal (sounds appealing, doesn't it?). Most major supermarkets & health food chains sell them if you are interested.

Chicken Wraps with Peanut Butter Sauce: makes 2 wraps for lunch

1 cup of shredded cooked chicken
handful of fresh spinach leaves
handful of slivered red bell pepper
lavash bread or wrap for rolling



Peanut Butter Dipping Sauce:

2 tbsp creamy style peanut butter
1 tbsp soy sauce
1 tbsp Asian sesame oil
1 tbsp red wine vinegar
1 tbsp olive oil

Stir dressing together with a fork until smooth.

Lay out the wraps and spread the peanut sauce all over.



Lay the chicken, spinach and red bell pepper pieces down the center and roll!

Slice the rolls in half and enjoy!

Is it weird that the thought of peanut butter and meat didn't turn me off but rather reeled me in to this post? I love peanut sauces and peanut butter in general - why not try it wrapped up with some chicken? This sounds like a delicious lunch and I'll have to try it soon. Thanks for sharing your recipe!

Do I spy Damascus Bakeries FLAX*FLAX*FLAX Roll-Ups? (Yes! Just checked your link) LOVE them, great nutritional stats & flavour. I use them all the time rolling my own gourmet wraps. I warm and blister then a bit right on my stove's burner before starting. Would you mind throwing a handful of fresh cilantro on my PB&C? Thanks.

I usually don't like roll ups because the bread tastes "raw" to me. I'll look for these Flax Roll Ups and make mine with cilantro too. What a great departure from mayonnaise. I only have chunky peanut butter but I think that would add an extra dimension. Thanks for a great lunch idea.

I love the Flax wrap idea for this yummy sandwich. Flour tortillas always seem too dense, so a healthy alternative like this is great.

I agree about the tortillas and the whole wheat wraps, they are tasteless and taste like they are uncooked. Yuck.
These flax rollups were soft and really nice. Yes, Damascus Bakery.....Shop Rite sells them.

I actually LOVE peanut butter in savory applications (actually, I love it no matter what!) and so this wrap sounds fantastic to me. What a good healthy lunch!

Hi, Stacey. Thank you for the recipe. Love PB dipping sauces for Asian dishes. I'm going to try the sauce and add a bit of Chinese 5 spice powder. Last night on "Chopped" one of 2 finalist chefs, an Asian woman, had to use PB in her dessert. She added the spice and the judges loved it. Lisa
