Coconut Blondies (more like "Bimbos")

Talk about decadent.

These are not your average blondies (and I am not your average brunette).
These should be called "Bimbos" instead of Blondies.

The addition of coconut and chopped pecans take these cookie bars to a new level.

If you can spare the calories (and really, who can?), then I suggest you try these this weekend, what else are you doing when it's 20F degrees outside, but cook, bake and EAT!

Decadent Blondies (adapted from Cooks Illustrated): more like Bimbos, than Blondies......

1 1/2 cup light brown sugar
2 eggs
2 tbsp vanilla
1 1/2 sticks of butter, melted

1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt

1 cup chopped pecans
6 oz. chocolate pieces
1 1/2 cups coconut (I used less, but you decide)

Mix first four ingredients into a bowl to combine, and then gradually add in the dry ingredients. Fold in the chocolate, nuts and coconut.
It's that easy.

Spread the dough out in a greased or parchment lined 9 x 13 baking dish.
Bake in a 350F oven for 22-25 minutes. Start checking them at about 20 minutes, you want them to be a little bit soft. Remove immediately and let cool on a rack before cutting into squares.

Enjoy!

I've made these and they are wonderful! I've found that toasting the coconut before adding into the batter helps cut down on that chewiness that some poeple don't care for.
Thanks.

This really looks delicious. Many of my favorite ingredients are in it. I especially like baking with coconut. Thank you!

After my 14 mile run today, I think I can spare a few calories for these babies...it'll definitely be the most bimbo action I'll get all weekend!

Don't like coconut squeaking between my teeth, but WOW, a hip yoga friend just turned me on to the magic of COCONUT BUTTER as a skin/hair treatment. The organic raw tubs they sell at Whole Foods, just smear it all over your sorry winter blanched self, DELICIOUS. Does this make ME a bimbo? ps you can cook with the stuff, too.

They look great! Funny I haven't heard the word bimbo in a while but it made me chuckle.

Thanks, Stacey. I've been looking for a blondie recipe. Tried to make my own but also adding pineapple, cashews and lime zest (Calling them "Lime in de Coconut Blondies"), but they were too wet. This recipe is a keeper. Lisa

these are soooo good. i toasted the coconut like someone suggested and used macadamia nuts as i had some to use up. they even made the very rich bars even richer. decadent and wonderful.
