Comfort: Broccoli Bacon & Cheddar Quiche



This was something I was craving. Not sure if it was the iron I needed from the broccoli, or just the melted cheddar cheese that makes everything taste so yummy. Either way, it satisfied both cravings.

This recipe makes a tall quiche, so make sure if you are using a pre-made pie crust, it is a deep dish one.

Broccoli Bacon & Cheddar Quiche:

1 9" prepared pie shell
1 cup of fresh broccoli florets
3 slices of bacon
1/2 an onion, chopped
1 cup of whole milk
4 eggs
1-2 cups of shredded cheddar cheese
salt & pepper



Steam the broccoli florets for about a minute or two (I do mine in the microwave), so they get a nice green color.

In a large bowl, mix the eggs and milk with a whisk and add the cheese.
Add the broccoli to this mixture and combine.

Cook the bacon slices until crisp. Drain and crumble the pieces. Scatter them on the bottom of a prepared 9" pie shell.

Cook the onion in the bacon fat and after translucent, using a slotted spoon, transfer to the bowl with the broccoli and custard mixture.
Season w/ salt and pepper.

Carefully pour the broccoli, cheese, onion and egg mixture slowly over the bacon bits in the pie shell. Make sure your pie shell is on a baking sheet, so if anything leaks, you won't have a mess.

Smooth everything out with a spoon to make it nice and even.
Bake at 350F for 40 minutes. Let rest before serving.

I have dough chilling in the fridge. I was going to revisit an old broccoli recipe from college today but now I am going to fiddle with it. Everything is better with bacon, right? I'm just going to wait until tomorrow. My old recipe uses a combo of cheddar and Swiss. I wonder if it's as good as I remember. sometimes the old recipes disappoint but sometimes they prove the test of time. We will see. Do you have any oldies that really didn't live up to your memories? As a kid I loved Spagettios and meat ravioli from the can...as an adult, yuck!
