Roasted Butternut Squash Pizza w/ Grapes & Goat Cheese

You may think this is a weird pizza combination, but it's DIVINE, trust me.
I usually roast squash w/ grapes together with red onion, it's a tried and true recipe and everyone loves it.
Why not throw it all on some pizza dough and add cheese to make it a main dish?
Done.
I tried making it with both goat cheese and fresh ricotta. Either or, it's your choice, I can't decide which one I liked better.
This is even wonderful using packaged Naan bread.
Here's how you make it.
You will need:
pizza dough or Naan bread
handful of red or black seedless grapes
1 small butternut squash, peeled and cut into 1" cubes
a few slices of red onion
1/2 lb. of fresh ricotta or soft goat cheese
olive oil & kosher salt
fresh sage leaves
Peel and cut up a small butternut squash (or buy it already pre-cut) into 1" pieces.
Cut a few slices of a red onion and mix them together w/ the squash on a roasting pan.
Drizzle w/ olive oil and kosher salt. Roast at 400F for about 15 minutes until getting soft and caramelized.

In the meantime, roll out your pizza dough or flatbread and spread fresh ricotta or chevre (goat cheese) all over the dough.
Slice a handful of red or black seedless grapes and place them haphazardly on top of the cheese.

When the squash is done, place that and the onions around the grapes and on the cheese. Sprinkle with a few sage leaves and place back in the oven (400F) for 15 minutes until dough is cooked thru.
