Very Good Pecan Pie

Pecan pie is one of those desserts that graces most American's Thanksgiving tables.

I usually make a chocolate version, just add chocolate chunks to the recipe and it becomes a "chocolate pecan pie", but this year I made a straight forward, traditional pecan pie.

I add a ton of pecans, because I like more nuts than a gooey corn syrup mixture.



Very Good Pecan Pie (just sweet and sticky enough):

1 (9 inch) pie shell
3/4 cup sugar
3/4 cup corn syrup
1/2 stick butter, melted
3 eggs, lightly beaten
1/2 tsp cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup chopped pecans
2/3 cup of chocolate chips (optional)

You can use a prepared pie shell for this if you like to make life much easier, but a homemade pastry is always best.

Mix all ingredients together and pour into prepared pie shell.
Decorate the top with some whole pecans if you like.

Bake at 350F for 45-50 minutes. Let rest in the pie pan or tart ring before removing, for about 20 minutes so the pie will solidify.

These pies freeze very well, so you can make some and freeze them for the upcoming holidays!

Whipped cream optional!

Pecan Pie is one of my favorites... Just something about that gooey filling with the nutty crunch of pecans on top. Thanks for sharing this recipe! I can't wait for some Thanksgiving pecan pie!

Unfortunately, no one celebrates Thanksgiving in Spain (neither in France), shame... I wish we did though. Nevertheless, I met a lovely american couple in a bar in Madrid last night, and the lady told me about the pumpkin bread she will bake for her children... She had stars in her eyes, and made ME want to bake this for Thanksgiving! Stacey, would you happen to have a recipe? Or anything similar. By the way, are you cooking a traditional turkey??
Okay, here's where I'm at with pecan pie. In advance I realize I'm a little weird. I'll eat a piece of pecan pie - but I can't get myself to cook one. I know, it's crazy.

First off, I have a challenge with crust. Second, even if it wasn't the crust issue, I can't get myself to cook with corn syrup. Never could.

I've never had pecan pie with chocolate in it. I may just have to break my aversion and go buy a bottle of Karo for this one pie.

I haven't made pecan pie for years. I love pecans and I love pie. However, most pecan pie recipes tend to be too gooey and over-the-top sweet. Great adaptation, Stacey. I'd eat this, with fresh whipped cream. Then, I'd dive int the turkey. What? Dessert first, right?
This reminds me a a "Derby Pie" that my daughters friend brought over last Thanksgiving, it's like a pecan pie with chocolate, only she added a little bourbon I think. One bite and I was smitten! I can't have good stuff like this in front of me, I'm so weak!

Hi - this looks yummy! But I made the Canadian Butter Tarts which were like a mini version of pecan pie! That way everyone can have pumpkin pie & a taste of pecan pie! (Note - I needed to grease my muffin tins; some of the ones from first batch stuck to the pan so I got to taste a few! I made tried both corn syrup and maple syrup and both were delish!!!)

What a great pecan pie recipe. Thanks. I think this could be a great addition to the Thanksgiving meal.
I went for a healthy pecan pie recipe with a cider, applesauce reduction. How you say, "sucked."

I'm back to my favorite version which looks much like yours--sweet is good.

Living in England we don't have corn syrup so what could I use instead? Maple syrup? Golden syrup?
Using Libby's pumpkin I make 2 pies just for my son. I use already prepared pie crusts so the pies are thin.

you could use either Lyle's or Maple syrup. (maple and pecans go nicely together!).
