Grilled Peach Yogurt Parfait

This is what I do with the grilled peach slices that fall apart and don't make it into my salads.

This is better than ice cream, if you can believe it!

We have so many Jersey peaches at the farm stands and I can't help but grill a few.



Grilling the peaches caramelizes them and makes them super sweet and sticky.

Save your peach scraps from grilling (the ones that don't look perfectly round), or you can certainly just chop up ripe peaches. I mix white and yellow.

I like FAGE 2% Greek yogurt with the honey pack on the side.
Place Greek yogurt in a parfait glass or bowl and dump the grilled peaches on top.
Drizzle the honey over the top and garnish with fresh mint leaves.



This makes a nice low fat breakfast or dessert.
