
HAPPY NEW YEAR!
I have had such a busy holiday season, cooking, baking, blogging and eating!.
I did a lot of cooking and entertaining and didn't have time to post everything, so here are a few things I made that didn't make it to Stacey Snacks.
I just want to warn you: there is nothing green on this page (though I swear, I made a lot of vegetables!).

I made 2 Torta Rusticas, filled w/ ricotta cheese, prosciutto, spinach and roasted peppers. Delicious.

I baked many datenut breads to give away, but this time instead of using vegetable oil, I used olive oil, and I liked it even better, if that's possible.

I made a sausage and spinach lasagne from Scott Conant's Food & Wine recipe this month, and we loved it.

and a challah raisin bread pudding.....which I will eventually post.

Nothing here is low calorie, so as of Monday, we can watch our calories together.
I am glad the holidays are over. I can barely fit into my jeans!

Yeah, spinach makes it all good, right? Heh. It all sounds great though.
Stacey - I too, am having my last hurrah before the purge. I wish I could have had it at your house though.

Those are some good looking calories! It is going to be tough to get back to eating sensibly but *sigh* it must be done!
Stop!, You're killing me! I've been eating salads and vegetable soup, for most of the week, but tonight I'm baking that date nut bread of yours, I might try it with ww flour and splenda. I'll let you know how it comes out.
I am all ready for the lasagna and how about the challah raisin bread pudding for dessert? Sounds delicious!

I was so busy as well, we still have guests come and go until yesterday, and I am exhausted. Anyway, I have to start thinking about a low calorie food myself. Too much of good and unbelievably high calorie food during the holiday that I ate.
You really don't have to deprive yourself from those. Discipline is what we must practice to have enough calories!
Girl tell me about it. I avoided the scale most of the holiday season.
