My Favorite Green Bean Recipe

This is my absolute favorite way to prepare green beans.

Green Beans with Frizzled Shallots & Walnuts:

1 lb. of green beans, trimmed
2 large shallots, sliced thin
handful of walnuts
salt & pepper
olive oil



I cook my beans for 5 minutes in salted boiling water, then run them under really cold water to stop the cooking process.

My father in law likes his beans a bit mushy, so he will always complain that they are not cooked enough for him.
He has never heard the word "al dente". Hey, to each his own. Cook them less or longer if you like.

In a heavy skillet, heat olive oil and saute the sliced shallots for a few minutes, moving them around with a wooden spoon until nice and crisp.



Add your green beans and walnuts to the pan and a little more olive oil and cook for another minute or so.
Taste and season with salt and pepper.

Serve immediately.
Enjoy!

This is an updated, fresher version of the old green bean casserole with those canned, fried onion rings. Your version is so much better.

We were separated at birth. This is one of my favorite meals of all time. We make our green beans the same-- and I make herb roasted turkey breast year-round. I agree-- buy top quality turkey only. Fortunately, I can get Diestel free-range turkey and it's worth the price. My craving has been switched on, thanks to you!
