No, I don't mean lard, as in FAT, I mean LARDER, as in your kitchen cupboard!
I always make extra green beans for dinner, so I can throw together a quickie salad from canned ingredients I have in the larder.
This way, when I am starving, I don't reach for that piece of cake, instead I eat salad.
This is sort of like my antipasto salad, except no salami, I add a can of Italian oil packed tuna. (feel free to add salami).
You can make this up as you go.
Any kind of canned bean, vegetable or leftover meat.
The dressing is made with a simple red wine vinaigrette.
This also is a good salad to pack up and take to work with you, the flavors get better as the week goes by.
Larder Salad: (no lard involved!)
1 can of garbanzo beans, rinsed and drained.
1/4 red onion, slices or chopped fine
1 can of tuna packed in oil, drained (preferably Italian FLOT)
1 stalk celery, chopped
1 ripe tomato, chopped
1 red bell pepper, diced
1 tbsp drained capers or olives
1 cup of cooked, cooled green beans (al dente is best)
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
salt and pepper
Mix all ingredients together and drizzle dressing over.
Gets better each day in the refrigerator.
