Guacamole Goodness

I love avocados. I LOVE THEM LOVE THEM LOVE THEM.

I sometimes just sprinkle kosher salt on them and eat them right out of their shell.

Here on the east coast, we only serve guacamole during the summer, even though we can get California avocados all year long, it only seems right to make guac during the sunny months.

Here is my basic guacamole recipe. It is sure to please.



Guacamole:

3 Hass avocados, cut in half, pit removed (save one pit if you are making ahead)
kosher salt
1/2 red onion, diced
1 clove minced garlic (optional)
handful of cherry tomatoes, quartered
juice of a lime or lemon
handful of fresh cilantro chopped

Scoop out the avocado flesh and put in a bowl. Sprinkle with about 1 tbsp of kosher salt.

Next, I add my lemon or lime juice, and throw in the rest of the ingredients, adding the cilantro at the end. Mix lightly with a fork or spoon.

I like my guacamole on the chunky side, so I don't overmix it.

Avocado tends to brown up quickly when exposed to the air, so if you are making this an hour ahead, place your guacamole in a bowl, then place an avocado pit in the center of the bowl and cover tightly with plastic wrap. This will help to prevent oxidation. It works!

Guacamole just the way I like it. I always add a little garlic too - I think it makes a big difference.

Once again, our passions for certain foods overlap! I LOVE avocados, too -- and was very disappointed when I introduced them to Baby Jacob (almost 10 months) and he spit it out, nearly gagging. (Truth be told, it was an especially lousy tasting one and I should have tasted it first!)

I usually follow Ina Garten's recipe (I like the inclusion of the worcestershire sauce), but I will be making your recipe tomorrow when we have some family over to swim! Hope you'll forgive me if I add worcestershire!!

I hope we can finally meet up in the city one of these days! I'd really love to see you and catch up (as well as eat and drink with you)!!

Yum, I love guacamole! I also have a recipe for guaca on my blog... I normally eat it with my homemade tortilla chips :)
Oh yeah, I love guac,the chunkier the better. 2 avocados are sitting on my counter right now getting nice and ripe. I'll remember your pit tip next time. You're so smart!

There is the trade off for the ridiculous cost of living in California-- year round avocados. I'm right with you on loving guacamole. I never tire of it.
Yours is a lovely version-- mine is basic and simple...avocado, a little fresh garlic and fresh lime juice, salt & pepper (sometime cilantro) and dig in!
I was getting some nice haas avocados for 75 cents a pop a few weeks ago - they are now back up to 2 bucks....looks good as usual...

I'm with you, I love avocados something fierce. I usually make my guac with just avocados, limes, and salt but I like the tomatoes and just a bit of red onion here.

Yes, we're on the same wave length again - especially since your guacamole is nearly identical to how I make it. I occasionally leave out the tomato, depending on whether I've got a nice one or not.

I make it year round! Never use garlic in it but do put jalapeño! Generous amounts of cilantro is a must!

Looks delicious! I could eat guac every day. I always include tomato, love it. And, I have a thing for lemon instead of lime in guac. That confuses the locals here, but they like it when they try it.
i love avocados too! I esp like when guacamole is super thick and chunky like your picture, so perfect for dipping :)

As Giff said, we've been making a lot of guac at our place lately. We also add some jalapeno or something else to spice it up a little. Audrey (4) enjoys it if it's not too spicy, but I tried Baby James (5 months) on some avocado yesterday and got the same reaction as baby Jacob - guess they are an acquired taste...
