Cedar Plank Salmon...Oh Yeah!

I have never had much luck cooking fish on wooden planks on the grill, they've always caught fire and burned the fish.

This time was no different, the plank still caught fire, but for some reason the fish cooked PERFECTLY!
I was a good girl and soaked the board for the recommended 2 hours, but it still caught ablaze!



The coating on this fish was wonderful and the smell in our backyard was so nice.....cedar & rosemary.
I can't wait to try another fish on a plank! We loved this!

Cedar Plank Salmon (from Gourmet Magazine)

1 cedar plank (click here to buy planks on amazon.com)
2 lb. salmon filet, skin on (1 1/2" thick)

2 tbsp grainy mustard
2 tbsp honey
1 tsp minced fresh rosemary
zest of a lemon
salt & pepper

Soak your cedar plank submerged in water for 2 hours.

Prepare grill medium-high (my grill cooks too hot, so I kept it at medium-low).

Stir together the mustard, honey, rosemary, lemon zest and salt & pepper.
Spoon this mixture on the top of the salmon and let stand at room temperature for 15 minutes.



Remove plank from water and place salmon on wooden plank, skin side down and cook with grill lid down for 13-15 minutes.



Let salmon rest 5 minutes before serving.



DELICIOUS!

I've always wanted to try doing this. I can't understand why your planks burned up, even with the soaking. Could your heat have been too high? Your salmon topping looks delicious too.
Try soaking it all day next time, maybe 2 hours wasn't enough. Love the flame photo though! Did you have your heat on medium? That seems to work for me. Your end result looks like perfection!
I can't believe it. Me, the not so good cook, has made a recipe very similar to this. And it was good! I had lost the recipe and now...I have found one again. Thanks for posting it.

The coating sounds great for salmon! I've never cedar planks, but I want to. I'll risk the flames for the aroma!

We love cedar planked salmon. The key is staying with the grill at all times. Without going into details we ended up with such a fire it melted the knobs on our grill. But we still grill it that way, it is so good. By the way you can get untreated cedar planks at building supply stores much cheaper. Love your pictures and recipe.

I will be on the lookout for cedar planks. It's a bummer that the plank caught on fire but at least the salmon turned out perfect. It really looks great Stacey.

in theory you are supposed to be able to use the planks more than once....maybe the heat is a little too high?

I've always had pretty good luck with planks, but this sauce looks heavenly. I just happen to have an extra plank in the pantry..

Looks yummy! Try cooking with "indirect" heat (no gas or coals directly underneath the plank. Also, soak longer and use Chardonnay. Soaking in lighter fluid makes if flame up even sooner! ;^)

I have yet to try cooking with cedar planks. What a great recipe. So glad it turned out great, despite catching fire. I should give this a go, just to say I did it.
Lovely...I have 4 cedar planks because of this very recipe which I've been waiting 5 years to make! I only got the planks some months ago...thanks for proving that it is one, worth waiting for
