Tagliatelle w/ Fresh Peas & Mint

Here is a lazy girl's 8 minute weeknight dinner for you.

Start the clock:

I buy this great fresh pasta that comes from Italy, it stays in the fridge for a while & takes all of a minute or two to cook.
I have some pesto made from the basil in my garden.
I bought fresh sweet peas at the farmers' market on the weekend.



What else can I put in the pan?

How about a half an onion, chopped and sauteed? Maybe some butter. Yeah.



Some white wine and chopped fresh sweet mint to finish it off & a sprinkle of grated Parmigiano Reggiano.

This took all of 8 minutes to put together. The hardest part was shelling the peas, and the best part was eating it.

Just goes to show you it's sometimes quicker and a whole lot tastier to put together a good meal than it is to get take-out.

See, you can eat well on weeknight! I am a true believer that every meal should be this good, and most shouldn't require hours to prepare.

Fresh peas are one of my favorite things in the world. You used them perfectly here - barely cooked to show off their perfect flavor and texture. Yum!

Yum! I bought some already shelled peas at our Farmers Market last week and used them in pasta. So delicious!
