Winter Food in June



It has rained 18 out of 22 days in N.J., no joke, so I figured why not make a winter comfort dish? It sure doesn't feel like June and I have been getting way too wet grilling outdoors lately.

So, tonight it's comfort food. Straight from December.

This is sort of like a cassoulet, but without the sausages and duck. So, I guess it's not like a cassoulet, except for the beans. duh.

I saw this yummy dish on this blog and figured this would warm us up!

It was excellent and easy (those 2 E's again!).

I doubled the amount of chicken and I pulled the meat off the bone with the extra chicken to make a great leftover stew.

I think this dish also needed some fresh herbs to give it color and more depth.
I chose rosemary sprigs, but thyme would be a good choice too.

Don't forget to use your splatter screen. Most important!



Baked Chicken with White Beans & Tomatoes: (from Gourmet Magazine):

6 bacon slices (1/4 lb total), cut into 1-inch pieces
4 large chicken thighs with skin and bone (I used 8 thighs)
2 medium onions, chopped (1 1/2 cups)
1 (14- to 16-oz) can stewed tomatoes including juice
2 (15- to 16-oz) cans small white beans, rinsed and drained
a few fresh rosemary or thyme sprigs

Put oven rack in middle position and preheat oven to 350°F.




Cook bacon in a 10-inch heavy ovenproof skillet over moderate heat, stirring occasionally, until browned and crisp, about 8 minutes. Transfer bacon with a slotted spoon to paper towels to drain, reserving fat in skillet.

While bacon is browning, pat chicken dry and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Brown chicken in fat in skillet over moderately high heat, turning over once, about 8 minutes total, then transfer chicken with tongs to paper towels to drain.

Pour off all but 3 tablespoons fat from skillet and reduce heat to moderate. Cook onions in skillet with 1/4 teaspoon salt, stirring and scraping up any brown bits, until golden brown, about 10 minutes. Stir tomatoes and juice into onions and boil, uncovered, 3 minutes, to concentrate juices slightly. Stir in bacon and beans and bring to a simmer. Nestle chicken, skin side up, in beans and bake, uncovered, until chicken is cooked through, 20 to 25 minutes.



I will save this delicious recipe for my winter repertoire, but in the mean time, SUN PLEASE COME OUT I need my vitamin D!!!!

Hi Stacey.. so glad you liked this dish. Yours looks incredible. I live in NJ also and this rain is a killer, my flowers do not even like it. Maybe by the weekend we will see sun?

That dish does look delish. I too am getting annoyed at the lack of sun, but watch - we'll be complaining of too much heat in a week or two.

Please send that rain our way. We desperately need it. We hit 100 in some area's of the state yesterday and are suppose to do it again today.

The faux cassoulet looks good. I love chicken and tomatoes. Have never had it with beans.

I'll have to add some breasts to it, the hubby doesn't like thighs. I think they are the best part of the chicken.

Looks like a real comforting dish. We'll trade some of your rain for heat as well, 105 today!
I am still waiting for summer but another dreary day again. I think I might bake today. Great dish!
Dang this rain, it just won't go away!! My poor dog is going stir crazy. This is perfect food for it though. Nice way to look on the brighter side of the weather.

I saw this recipe on Donna's website and made a mental note to save this for winter. I don't want to jinx the sun that is finally coming to my part of California by making comfort food. Would you believe I'm not a fan of dark meat at all? You can I could share a whole chicken, because I only like the chicken breasts. Still, my boys would love this.

Not to rub it in, but I think our states have switched weather. We have had our best June on record in Seattle and I think it's because our weather went East! Now you know what we suffer through most Junes. I know it's not fun! Hang in there!

this makes me laugh because i went home and made an apple crisp yesterday and was thinking how that's definitely not summer food. i think you're right -- let's blame it on the weather.

Stacey I know! What's going on with this weather here in NJ? I hate it! Don't get me wrong, I love the occasional thunderstorm but this is just seriously putting a dent in my summer plans! (not much planned but still!!!)

Anyway, your dish looks fabulous! We should meet up one day! I work in short hills!
I always have trouble giving up the winter comfort dishes when the warm weather arrives. Hasn't been an issue this year! I could sure dig into that chicken and white beans!

I think this chicken is suitable for summer as well, and I'll serve it cool or room temperature. Viola, it's real 2E's summer chicken.

Hi Stacey!

In my 42 years in NJ... OK, 23 as a person who had to cook for his self or his family... I never once let the weather preclude me from grilling. I grilled in the pouring rain, the blinding snow, the blazing heat, the stifling humidity... Now, I don't have to worry about it in AZ ;^)

In fact I just grilled my polenta (in the 100 degree heat) for my Sautéed chicken livers with onions and Crostini di Polenta con funghi Trifolati... and, yes, I took photos and will happily guest blog. Look for it tomorrow.
You know, I baked some halibut tonight on top of canneloni beans, tomatoes and a little pesto.
So good, I love that combination! I had my oven on in the house, I must be crazy! It's blaring hot outside!!

I have been making a dish almost exactly like this sans bacon for the past few years and my family loves it. Yum, too bad it is just way too hot here to enjoy this type of comfort food right now!
