Here is my basic tomato bruschetta recipe.

Pronounced BRU-SKETTA, please.

This is probably one of the first things I learned how to make when I was a teenager.

You can use any variety of tomatoes. Cherry, Heirloom, Roma or whatever you have.
I like to use Roma (also known as plum) tomatoes because they don't seem to get mushy, they have less moisture than other tomatoes.



I have seen people add kalamata olives or onions. Not me.
Here is my recipe. SO good and SO easy.

Simple Tomato Bruschetta: makes a lot

6 Roma (plum) tomatoes, chopped
1-2 garlic clove, minced
1/4 cup fresh basil leaves, chopped
1 tbsp balsamic vinegar
2 tbsp olive oil
kosher salt

Add your chopped tomatoes to a bowl and sprinkle with kosher salt.



Add the rest of your ingredients and mix together. You can make this hours ahead and keep on the counter at room temperature.



For the bread:
Slice a good baguette or ciabatta on the bias into slices, and drizzle with a little olive oil.
On a baking sheet, toast your bread slices at 400 degrees for a few minutes, watch that they don't burn.

Split a peeled garlic clove in half and while the toasts are still warm, rub the garlic half all over the top of the toasts. This will release the oil from the garlic and coat the bread.



Now you are ready to spoon your tomato mixture on top of the toasts.

Arrange on a platter and serve!

Stacey - This is the KING of summertime appetizers. When the tomatoes are ripe on the vine there is nothing better than to sit down with the crunch of the bread, the fresh tomato and basil taste and good olive oil all combined into one classic recipe. I'm with you - don't mess with it and add olives. It's perfect as is. And PLEASE, you're so right - it's broosKetta, NOT brooShetta (even in Southern Italy, it's pronounced BrooshKetta with the hard K sound)

This looks so YUMMY! I absolutely love this appetizer, but have never made it at home. After reading your post about how easy it is, I think I'm going to make it this week! Hopefully you're having more of a summer than here...rain mostly :(

Mmmm, bruschetta. Looks great. My brother has a neighbor that shows up at his apartment a couple times a season with a bunch of fresh tomatoes. He grows too many, you see. My brother always makes some bruschetta with them, it's so good.

Whew. I've been pronouncing it right! I am anxiously waiting for my first home grown tomatoes to be ripe enough for this. I could eat dozens of these, all by myself. You and I make them the exact same way-- simple, but so delicious! This is on my TGIF for night!

Beautiful photos - love the way the water beads on the tomatoes! Isn't this the most satisfying appetizer - it tastes like pure summer, and usually I could make a meal out of bruschetta.

Oh yes, this is exactly how I like my broosketta. :) I really don't think it needs more than this and it makes for such a lovely party appetizer.

Thank you for putting the correct phonetic pronunciation out there. I am always saying "broo-sketta," and drawing mostly blank looks from those around me. Let's start a movement! This looks just delicious, and a great way to use our tomatoes (which are still green at the moment, but it won't be long!).
