April Random Bites & My Hopeful Garden

There is one lonely April tulip in my garden, but there is hope.

We made a homemade pizza with homemade crust.
I threw some leftover roasted asparagus on top & a ball of sliced Italian Bufala Mozzarella!

A couple of basil leaves thrown on top and we were transported to Naples!

Had a fantastic meal at Dell'Anima in the West Village. I had fabulous GRILLED SWEETBREADS (cow's glands) w/ a parsley root purée, blood orange & campari sauce w/ fennel mostarda and a delicious salad of ENDIVE with anchovy citronette and Pecorino Romano. WOW.

I roast chicken breasts on Mondays so I have a healthy lunch when I come home starving during the week.....I made this lazy lunch with some leftover roasted asparagus, roasted red peppers and Trader Joe's Sesame Ginger dressing.

My spring herbs taking root in the April sun.

Well even if you have only one tulip, it's a stunner. Sweetbreads? never could get a liking for them, but the rest of the ingredients and the sauce sound wonderful. Your leftover chicken lunch looks great. Good luck with the herb garden.

Look at your herbs! There is nothing like picking them from your garden and right into your recipes. I have one lonely rose.
Even your lazy lunch looks healthy and delicious. It's so nice to enjoy longer days and spring colors.

Ugh so jealous! I cannot grow anything in my back yard! Not just because my thumb is black, but the dogs that dig int he yard don't help either.

Oh, I'm so excited to see those herbs grow. I've picked up a rosemary, basil and parsley plant myself. They are in my kitchen window getting a head start before I plant them outside.

Spring is around the corner and the Lonely Tulip is timidly attempting to survive the NJ weather.

TJ's Sesame Ginger Dressing? Will have to look for that. I have chicken on hand all week for the same reason. I love my lunchtime salads!

Yay for your fresh herbs!
