

This is such a nice idea for breakfast/brunch for a crowd.
It is so simple, makes 12 at a time and the baskets stays warm, unlike scrambled eggs which always seem to get cold when left on the plate.
There are many variations of this recipe on the blogosphere. I've tried it 2 weekends in a row, and I find that this method worked best. I made them 2 ways, some scrambled with cheese, and others just baked with a soft center.
We couldn't decide which way we liked them best.
Spray a 12 cup muffin tin with PAM spray.
Lightly cook 12 strips of bacon (or how ever many baskets you are making).
Do NOT cook the bacon till crisp, but just enough to get rid of some of the grease. A few seconds on each side. Drain on paper towels.
Coil your bacon slices around the wells of the muffin tin.

Crack an egg and pour into the well.
Sprinkle with salt and pepper.
You can also whisk your eggs together and add some cheese, like a quiche, and pour this mixture into the bacon baskets.
I baked them 375 for 10 minutes for a runny center (to soak up with toast), or 12 minutes for the scrambled & cheese version.

Use a spoon to remove the baskets and serve! They are so pretty and better than the usual bacon and eggs.

Those look great: and you are right about the ease of preparation.
I made something similar using thinly cut lunch meat and also addded sauted vegetables before topping the entire thing with an egg.
These are my best and favorite things to have for breakfast. Such a superb idea combine the two and bake them in a muffin pan. Delicious for sure.

You're. So. Right. This is the perfect brunch. No more running around trying to get the toast and the coffee and the OJ on the table before the eggs get cold. I truly can't figure out whether the 'cracked' or the 'scrambled' variety are best. I guess I'll have to keep on making half of each 'til I figure it out.

We do something similar, however we first put a square of bread in the cupcake tin, then two slices of bacon crossed over (uncooked at this stage) before cracking the egg in. However, you end up having to get rid of most of the whites as otherwise they overflow. Then you fold the bacon over and put a toothpick through before cooking. The best breakfast ever!

I made these tonight exactly the way it said - I wanted soft egg yolks - the only issue was that the bacon was not done enough after the eggs were set. I wonder if they should bake a few minutes before adding the eggs? I had to unwrap the bacon and continue cooking before eating. Otherwise - fantastic idea :)

this is what I grew up knowing as "Radio Eggs". When my mother was about 5 (in 1932), she heard this recipe on the radio, during the commercial she ran and got her mother, so it could be written down. I grew up, loving the meal and the story. We often had this as a dinner. Though mother recommends cooking the bacon longer than you do.you want it so wrap around the muffin tin, but not so raw. Kat Garvey
