Cranberry Orange Pecan Bread



I love quick breads, because they are QUICK! (hence the word "quick": no yeast, no rising, just really a cake or tea bread).

I had a bag of fresh cranberries leftover from Thanksgiving, and Alexa from Artsy-Foodie made a delicious looking gluten free cranberry orange bread this week.
I liked her addition of yogurt, it seems to be my favorite new ingredient in cakes. It makes them so moist.

So, I took an old Betty Crocker recipe and a Silver Palate recipe and sort of played with them (and Alexa's yogurt addition), and it came out GREAT.



Cranberry Orange Pecan Quick Bread:

2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup orange juice
1/2 cup plain yogurt
Grated peel of 1 orange
2 tablespoons vegetable oil
2 tablespoons hot water
1 cup fresh or frozen cranberries
1 cup pecans

Mix all ingredients and pour into a greased loaf pan. Bake at 350 for 1 hour & 10 minutes. Cool in pan an hour before removing.

Wine at 9am? I could do a mimosa that early but not wine until noon.I love making quick breads too.

Hey Stacy! I just made one of those ridiculously quick loaves at work yesterday. Flour+baking powder+salt+.... a can of beer (hm, ok, the reason I tried the recipe in the first place). The embassy smelled of warm bread and beer throughout the morning, people must really have wondered what was going on.

I'm a big fan of yogurt in baking, I use it in my cupcakes a lot. I bet this is a great bread

Orange + Cranberry + Pecan sounds like the perfect combo. All are great ingredients for holiday recipes and the perfect breakfast or snack.
I love recipes like this because they make a tasty quick gift for people.

I am really admiring your detox efforts. Even though I'm eating my share of salads and vegetables this week, I am also snarfing down leftover pie, cake, mousse, and cookies at an alarming rate.

Your quick bread looks delicious Stacey... You sound a lot like me: taking a little bit of one recipe then another and making it your own--lovely results. If I wasn't sick with the flu, I'd try your version... Oh, well when I get better. Have a good week!

Just wanted to tell you that I made this loaf, among others, to give as Christmas gifts. I made as shown; however, I divided them into smaller loaves. The pan I bought was 4 loaves in one for only $8. I baked for about 40 minutes, checking for doneness. They were excellent. Made a couple batches, and froze a couple. The smaller size is the perfect size for hubby and I to have a few slices each without pigging out. And, we just had some last night from the freezer and it was still fantastic.
