Smoked Trout & Apple Salad w/ Horseradish Dressing



This is a terrific salad for fall. I used some of those big ass Jonagold apples from the farmers' market on Sunday. I made individual broccoli and cheddar quiches in muffin tins to go with the salad.

I make this salad once a year (like so many dishes) and it always is a big hit.
The original recipe was from a 2003 issue of Food & Wine.

The horseradish dressing is heavy, so go lightly on it.

Smoked Trout & Green Apple Salad w/ Horseradish Dressing:
serves 4

~ package of smoked trout filets (usually comes 2 in a package)
~ bag of arugula (or 2 heads, washed)
~ 2 Granny Smith or Jona Gold green apples, cut into matchsticks (do not peel them)

Dressing:
~ handful of chopped chives (I used scallions, because that's what I had)
~ 2 tbsp Hellman's mayonnaise
~ 2 tbsp buttermilk (you can substitute whole milk w/ a squeeze of lemon juice)
~ 2 tbsp of prepared horseradish (not the red colored horseradish)
~ pinch of salt and pepper

Mix the 3 salad ingredients together in one bowl. Mix the smoked trout in a separate bowl with some of the dressing and spoon the dressed trout on top of the salad on individual plates.
The taste of the crisp apples with the spicy arugula and smoked fish is so wonderful.

The hot artichoke dip looks amazing! I would eat way too much of that.
