Sick Day: Apple Cake
I am at home today, not feeling well. I slept for 14 hours and when I woke up I looked at food blogs. What else would I be doing? God forbid I should fold the laundry that is sitting in the basket for 2 days now.
I looked at Smitten Kitchen's Jewish Apple Cake, and just the photo made me salivate.
I still have apples from apple picking the other day, and even though we have leftover cake on the counter, I am going to make this NOW!
I am still in my pajamas at 3:00 pm, and just peeled the 6 apples and finished the batter. It looks beautiful. I have 90 minutes before reporting in on the results.......so check back tonight!
The only thing I changed from Debra's mom's recipe was that I substituted canola oil for vegetable oil, since I didn't have any. I also added the walnuts, as the recipe indicated.
Debra has a removable bottom tube pan, which I don't own, so I am crossing my fingers that my cake does not stick to the pan like so many of my cakes have done!
