Fuzzy Salad



What do you do with all of those ripe at the same time, fuzzy peaches? Well, you can make a peach cobbler (we all know I don't love to bake, except in the winter), OR....you can make an easy weeknight salad. The sweet peaches pair beautifully with the peppery arugula.
This will take you 10 minutes to prepare. Try it and let me know!
The cleanup committee loved it! (that would be my husband).

Peach & Arugula Salad:

2 ripe peaches, pit removed and sliced into 1/2" slices
1 bunch of arugula, washed & dried (you can use bagged if you can't find fresh)
1/4 c. of ricotta salata cheese (you can substitute goat cheese or feta)
Dressing consists of 1 tbsp honey, 3 tbsp olive oil, and half a lemon squeezed.
Salt and pepper

Mmm... this sounds great. What a great alternative to the usual peach dish. I'll bet it would be nice with apricots, too, don't you think? My sister has a very enthusiastic apricot tree and it might be worth a try!
