Crabtini





What the heck is a "crabtini" anyway? I guess you can put the suffix tini at the end of anything you put in a martini glass.
Anyway, this came out excellent, the food tasters (my brother, my husband & my neighbor) raved.

I bought the freshest, big ass, jumbo lump crabmeat at Costco (yes, that dreaded place) for only 20 bucks.
I made my basic guacamole recipe and folded in the crab. I arranged some cherry tomatoes on the bottom of each glass & poured a little dressing first on the cherry tomatoes, then over the crabmeat mixture. Garnished with a lime wedge. The perfect summer appetizer. This makes 4 generous crabtinis.

Crabtini:

2 ripe avocados, pit removed, scoop out and dice
1 tbsp kosher salt
16 oz. of GOOD quality fresh lump crabmeat
1 ripe mango, diced (if you've never cut a mango, I suggest you read this!)
juice of a fresh lime
a bunch of fresh cilantro, chopped
1/2 lb. cherry tomatoes, quartered (for the bottom of the glasses)

Dressing:

3 tbsp. fresh orange juice
3 tbsp. olive oil
juice of a fresh lime (so you will need a total of 2 limes for the recipe, 1 for the salad, 1 for the dressing, got it?)
1 tsp honey

Looks like a winner! I'll have to make a trip to Sam's, get some crab and make these. I have not used our new Luigi Bormioli martini glasses (we've had them almost two years now) yet and I think this is how we will Christen them!
