Blueberry Waffles for Breakfast


I promised not to post anymore blueberry desserts, but waffles don't count as a dessert unless you put ice cream in between them, and I am still able to get local NJ blueberries.

I wasn't sure how the blueberries would work in the waffle maker, but they were just fine.
They got smushed and streaky, but they were delicious!

Make sure you spray your waffle maker on the top and bottom with nonstick cooking spray, or the waffles will stick for sure.

Here is my basic waffle recipe. There is no butter, and no oil in the mix, and they are still nice and moist.
Feel free to add in what you like.

Blueberry Waffles:

1 cup flour
1/4 cup sugar
1 large egg
1 cup milk
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
fresh or frozen blueberries

Mix the batter together to make a batter. I find it easiest to transfer the batter to a 4 cup measuring cup with a spout for easy pouring.


Pour the batter out into the preheated waffle maker and close the lid.
My waffles took 6 minutes.

Flip out of the waffle maker and add some fresh blueberries to the top and maple syrup.

These were fantastic.

You can freeze them, and take them out and put in the toaster oven for fresh crispy waffles anytime.

It works and the batter is nice and moist.
