Goodbye Aunt Jemima



It's Saturday morning.
The first thing my husband says when he wakes up this a.m. is:
"Do we have any pancake mix?".

He has always liked pancakes in the winter on a weekend. I have never liked them because I find them too heavy and they lay in your stomach like lead all day.
I know, what kind of person am I that I don't eat pancakes? ( I do like French toast!).

Well, if I DO have pancake mix, then it's 2 years old. I went downstairs and checked to see if Aunt Jemima was in the cupboard. She was not.
You could hear the disappointed sighs.

How hard could it be to make homemade pancake mix? and why have I always bought a box of mix? I never thought about it.

I had a Swedish apple pancake recipe that I do in a cast iron skillet, so I modified it for breakfast pancakes and they came out FABULOUS!!!!
I feel so silly, this was so easy. I had a few bites and really liked them, they didn't have that chemical aftertaste that boxed mixes can have.

Sorry Aunt Jemima, I will not be buying you anymore. Goodbye.



Stacey Snacks Pancake Mix:
(makes about 12 pancakes, depending on size)

1 cup flour
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 tbsp sugar

mix dry ingredients together and add:

1 egg
2 tbsp vegetable oil
1 cup whole milk
1 tbsp water to thin (batter is very thick)

Pour into discs onto a hot skillet. Turn when bubbling.
Of course you can add blueberries, chocolate chips or whatever you like!

The sighs turned into smiles very quickly!

Oh, I feel like pond scum... I just bought the already made pancake mix that comes out of a can, like ready whip, lol. Why is it that we always try to find substitutions for the most simple of recipes!?! These pancakes look sooo good!

I love pancakes! These look great. I have a go-to recipe that I use, it has clumpy butter that turns into pockets of flavor. Good times.

I always get a kick out of people who think things like pancake and waffle mix is really hard to make. Then once they realize how few ingrediants there are, they never go back to the box.

My husband is the pancake maker at my house... but, we keep a box of Bisquick on hand for him. I would rather have homemade since I always feel like they sit in my stomach for hours after eating them. I might have to make your mix and put it in his container to see if he notices a difference!

OK, I'm not a pancake fan but my 2,4 and 6 year olds are. So... I just made these and we, me included, love them.

I completely agree about a strang after taste with box mix. I coould never really figure out what that was, but lived with it. Thanks to you, I don't have to!!!!

Oh gosh Stace do you know I haven't had pancakes once since I have been in the US?? Outrageous! Yours look damn scrumptious too. I'm thinking I need to start a pantry in my office so I have supplies to make pancakes when I have the munchies. And a gallon of maple syrup.

I had a similar experience thanksgiving weekend, although less original... I made pancakes from scratch from Joy of Cooking, and then was left pondering why the heck I had bought from the store all these years for something worse.
Oh my - these are some good looking hot cakes - really, they are!
I've been waiting to make these! I finally did for my mother's day breakfast-in-bed. My mother thought they were the best pancakes she's ever had- and I agree! I ended up making a mix of dry ingredients and giving them to my aunts for presents. Loved em!

I highly recommend adding 1 tsp of cinnamon and 1 tsp of vanilla- makes it even better.
