I have been making it for several years now.<br />I always double the recipe, and freeze half of it.<br />I lightened it up a bit by using skinless, boneless, chicken thighs, I use Gulden's mustard, double the herbs and add 1/2 cup of chicken stock because no chicken skin means less juice.<br />I serve it with Orzo pasta to soak up the juices. I put all veggies on the bottom of the dish, cut up 4 boneless, skinless chicken breasts and spread the pieces on top. I added sun dried tomato to the top of the chicken then poured the sauce/liquid on over everything. I omitted the bay leaf and probably doubled all herbs except garlic. Phenomenal dish!
