That was a good call adding...These came out great. <br />That was a good call adding the eggs in. I added in 1 more egg, to make it 4 and these were not dry at all, I fried them and they held together pretty well. <br />Delicious with sour cream and salsa on top. Can you imagine NOT adding eggs, like the original recipe reads?<br /><br />I used a few tablespoons of the corn salsa for spice and heat. The whole container? I used 4TBsp of salsa and they were a bit dry. Ended up serving the rest of the salsa on top. Loved baking them - made it so easy.
