Savory Basil Cornmeal Waffles w/ Caprese Salad


Buckle your seatbelts, because this post is a good one.

I have so many tomatoes right now, I am trying to come up with new and interesting recipes to use them in.
How many Caprese salads can one eat? A lot.

Here, I made savory cornmeal waffles with basil from the garden (which I have a TON of) and put the tomato salad on top!

These waffles would also be great with slices of summer tomatoes and bacon and a swipe of mayo in between.
Think corn muffins in the waffle maker.


I followed Kale & Caramel's recipe for her waffles (but added more sugar, cause I like a sweeter waffle), using the cornstarch, and cider vinegar (don't ask me why you need these ingredients, because I just did what I was told).

I added in oil packed sun-dried tomatoes and I highly recommend you do too.

The recipe makes 6 waffles, and I froze 4 of them for another day.

This is a delicious and impressive brunch idea......I never get tired of tomatoes (well, maybe by late September, I will be happy to see apples).

Savory Basil Cornmeal Waffles w/ Caprese Salad:

1 cup unbleached white flour
1/2 cup cornmeal
2 teaspoons corn starch
2 tbsp granulated sugar
1 teaspoon baking powder
3/4 teaspoon sea salt
a few grinds of ground black pepper
1 cup whole milk
2 eggs
2 teaspoons olive oil
1/2 teaspoon apple cider vinegar
1/2 cup grated parmesan cheese
1 tablespoon minced fresh basil
handful of chopped sun-dried tomatoes

It's easiest to mix all ingredients in a bowl them transfer to a large 4 cup measuring cup for easy pouring into the waffle maker.

Don't forget to spray both sides of the waffle maker w/ non-stick spray, so the waffles don't stick!

Mix all ingredients together to form a thick batter.

Slowly pour into the preheated, and oiled waffle maker.
Press down lid and cook exactly 5 minutes.


While the waffles are cooking, make the salad.

Caprese Salad:

sliced summer ripe tomatoes (heirlooms or cherry tomatoes are best!)
pinch of sea salt & pepper
splash of balsamic vinegar
splash of olive oil
a few small fresh basil leaves
torn fresh mozzarella cheese

Remove warm waffles to a plate and top with the Caprese salad. I drizzled with balsamic syrup and topped with spicy tomato chutney.
