Taco Tuesday: Black Bean & Quinoa


This a great vegetarian option for Taco Tuesdays.

Healthy quinoa, mixed w/ black beans and some other canned stuff you have in the house.

I made the quinoa the day before, so I was ready to go.

So easy, so healthy, an so delicious.

Here's how:

1 1/2 cups of cooked quinoa
1 small can of Ro-tel tomatoes w/ chilis
1 small can of black beans, rinsed and drained
1 small can of corn (or 2 tbsp of Trader Joe's corn chili salsa!)
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp cayenne (optional....I find the Ro-tel tomatoes give it enough of a kick for me)
pinch of kosher salt
juice of half a lime (save the other half for garnish)
sour cream
cilantro
avocado

Once your quinoa is cooked, add in the drained black beans, the can of tomatoes w/ chilis and the corn salsa.


Add in the spices and the salt.
Squeeze in the half of lime.

Heat on low and keep stirring about 5 minutes until everything is warmed thru.
Basically, everything is already cooked, so you are just heating it.

Spoon into corn tortillas (either fried or microwaved) and swipe w/ some sour cream so they stay closed.
Top with avocado and cilantro.


These are delicious and healthy. Even kids will like them!
