Avocado Tartines w/ Cucumber & Tomato


Here is a delicious lunch or breakfast idea.

Once my heirloom tomatoes are ripe (any day now), these will be even better, but for now I used cherry tomatoes because they at least are packed with flavor.

Feel free to use basil or cilantro, and sub in lemon for the lime juice.

Here's how:

Make a basic guacamole:


Mash 1 avocado (peeled obviously!) with sea salt, fresh lime juice, chopped cilantro and red onion.

Smear on whole grain toasts with crusts removed.

Lay a cucumber and tomato slice on each slice of bread then cut in half.

Sprinkle w/ black pepper or hot pepper!

What a delicious idea for a meal (and pretty too). I'm going to make this and add a few chopped basil leaves in with my guacamole for extra flavor!
