Guilt Free Pleasure: Crustless Spinach Quiche



Since when do I make anything low fat?
I never buy products that say LOW FAT. This includes low fat cheeses (except natural ones made w/ skim milk), or reduced fat mayo.

If you are on a diet, then my philosophy is, eat a salad with grilled chicken, and forget the heavy cream. A tablespoon of butter won't kill you, but the whole stick might!
Skip the cookies all together (easier said than done) & stop watching Paula Deen!
A whole box of low fat Entenmann's cookies does not equal having 1 regular brownie.
Eat the 1 damn brownie.

Low fat foods generally have FAKE & CHEMICAL ingredients in them, like OLESTRA (yum, can anyone say DIARRHEA???), or SPLENDA, it is NOT sugar. It is made from SUCRALOSE, a synthetic compound. It has been chemically modified, STAY AWAY! And gotta love that NUTRASWEET (causes cancer in rats, so I have no interest in trying it out.....that includes DIET soda). Start reading labels and you will stay thinner and be healthier in the long run.

I am not a nutritionist, though I play one on t.v., but can figure out the abc's of good eating. Substitute good olive oil for butter, make salad dressings from a tiny bit of olive oil w/ lemon juice or vinegar and some fresh herbs, and eat natural and healthy, homemade foods, not processed or packaged foods.
Why do people live to be 100 in Italy? Because they eat the slow food way. They shop for their produce and meat daily, and they cook everything from scratch.

I don't shop organic, but I do buy fresh produce, natural meats from the butcher, and make my own salad dressings, sauces and baked goods, etc. If you are reading this food blog, then you have some interest in cooking, so you won't be shocked!

Well, Christmas is coming, and the goose is getting fat.
All of those yummy holiday baked goods are right around the corner.......I know I am going to be tempted with all you excellent bakers out there. Food Blogga will soon be doing her cookie post (last year her 212 cookie posts from around the world!), and I am scared!

Enough already. Isn't this post about a crustless quiche?

I had this recipe from All Recipes in my favorites that received like 432 five star ratings.
I said, how could something so simple be so good? Well, it really was very good.

I modified it a bit, and it was great for lunch the next day with a salad.
Guilty free, no butter, no cream, no flaky pastry crust, and still delicious.
Try it, you'll like it!



Crustless Spinach Quiche (adapted from Allrecipes.com):

10 oz. package frozen spinach, defrosted & drained of moisture
1 onion, chopped
5 eggs
2 cups of cheese (the recipe calls for 3 cups of muenster, but I cut it) I used half cheddar, half mozzarella
salt & pepper

Saute chopped onion in olive oil until soft. To the pan, add defrosted spinach, salt & pepper, saute another minute and put aside.

Beat eggs and add your cheese (any type will do). Pour spinach/onion mixture in with eggs and cheese.
Pour into a greased pie plate and bake at 350 for 30 minutes. Wait 10 minutes before slicing.

You won't miss the crust or the heavy cream, I promise.

I agree on all the artificial eating and I too just cut back on things to make them more healthy (unless it's reduced fat ice cream, then I eat more and more).

This quiche looks good, reminds me of my spinach frittata. Hey what's the difference between crustless quiche and frittata anyways? Is there any?

Very similar, except I put the whole frying pan in the oven instead of a pie plate.

I really enjoy a good crustless quiche. I agree... if it's tasty, you don't really miss the crust much at all. I might try a little feta in this one to Greek it up a bit! Yum!

Got here from Alexa's when I heard you were a New Yorker who had never tried Indian food...Love this guilt-free quiche. Looks great to me! Love how well it sliced too. I've now begun making a really thin pie crust to cut the fat, but this seems a bterr option!

i'm all for what you're preaching. well, you know about our cooking style on my blog. we really indulge on weekends at dinner. we exercise. and we never, EVER, eat processed foods. to me, this is alot more healthy than going on weird diets and eating those low-fat jenny craig meals. not that there's anything wrong w/ that.

we'll miss you tonight at the dinner!! but PLEASE let's plan drinks in the city in the next few months! promise? this one your husband will be able to attend.
